Grilled asparagus topped with fried eggs smothered in garlicky mushroom cream sauce for breakfast today.....
Grill asparagus in olive oil in a hot pan, move to a serving plate and keep warm. Fry eggs in pan. Place eggs on top of asparagus and keep warm.
Put butter in pan along with chopped mushrooms and cook adding minced garlic just at the end with chopped chives and tarragon (or other herbs you have around). Turn off heat and add cream, mix well then pour over eggs and asparagus. Add salt & pepper to taste. Easy done!
