So many oranges! Ive been putting citrus in everything and right now I love this Choc Orange Cake - it's grain-free, dairy-free and gluten-free.
Ingredients: 2 large or 3 small oranges 3 duck eggs/5 chicken eggs 3 tablespoons melted coconut oil 3-4 tablespoons honey 1/2 cup coconut flour 1/2 cup raw cacao 1 teaspoon basing soda/bi-carb
Method: Boil oranges for one hour, then allow to cool. Preheat oven to 150C and prepare a cake tin.
Place cooled oranges in the food processor and blitz. Add all other ingredients and mix well. Pour into prepared tin and bake 30 minutes.
Remove from oven and allow to cool, then turn out onto a cake plate.
If you like a glaze, warm a couple tablespoons of orange marmalade and spread over the top (or drizzle with chocolate ganache).
