Honey Apples

Remember all the apples (something like 60kg of them) that we took off the trees because the birds found a way under the netting? Well, I've made applesauce, apple & raisin pie filling, rhubarb & apple compote, spiced stewed apples, apple butter.....all preserved for Winter.

The other thing I've been doing is baking the apples and putting them in my girls' lunchboxes.

Here's what you do: cut apples in half and cut out the core. Place them on a baking tray and drizzle honey over them, then sprinkle with cinnamon (you could top each one with butter or coconut oil too if you like). Bake at 180C/350F for about 20-30 minutes depending on the variety of apple you use.

You can serve these warm, too, with custard, cream, coconut cream or yogurt.

Enjoy - N x
