Cauliflower Flatbread


This is a take on The Green Kitchen recipe for Rainbow Flatbread.....

INGREDIENTS:

400g cauliflower, put through the food processor 1 cup almond meal 1/2 - 1 teaspoon salt Pepper to taste Handful of cheese of choice (I like parmesan) 4 eggs Fresh, chopped herbs if desired

METHOD:

Preheat oven to 200C/400F and line a large baking tray with wax paper/baking paper. Put cauliflower, almond meal, salt, pepper, cheese in a bowl and mix well. Make a well in the center, add eggs to the center and mix slowly with the cauliflower mixture until a dough forms.

Turn out into the prepared baking sheet and press flat about 1/4 inch/2 cm thick. Place in oven for 20-25 minutes. When cool cut into pieces.

This bread holds together well so you can use it as sandwich bread or put it in the toaster of needed.

You can also substitute briccoli for the cauliflower.
