Broccoli Scrambled Eggs


METHOD:

Place olive oil or ghee in a hot pan, add in diced onion. Cook until onions start to brown. Put choped broccoli or other cruciferous veg into the pan (I used leftover streamed broccoli from the night before).

Make up an egg mixture while the broccoli cooks - place two eggs per person in a bowl along with a bit of milk (or milk alternative), salt, pepper and a handful of grated cheese; whisk.

Add egg mixture to your pan, cook until eggs are the consistency you like.

Serve with kimchi and homemade ketchup or kasundi and a side of avocado.

A healthy, fast low carb breakfast that will keep your blood sugar levels stable until lunch!
