Red Sauerkraut


As requested, the recipe for Red Sauerkraut.

INGREDIENTS:

1 x red cabbage, shredded 1 x red beetroot/beet, shredded 1 x yellow beetroot/beet, shredded 2 x carrots 2 teaspoons juniper berries, bruised 1 tablespoon sea salt

This recipe can be increased depending on quantity desired. This will make about a quart/litre.

Place all ingredients in a large bowl or tub. Bash with a meat tenderiser or something similar until juices/liquid appears on the bottom.

Put mixture in jar(s), pushing down so that liquid comes up over the top of the cabbage. Place lid on and set on bench for 5 - 7 days, then into the fridge.
