Lemon Bliss Balls


Today is about using up some of the citrus....so, Shelby made Lemon Bliss Balls!

*1 1/2 cups shredded coconut *1 cup almond meal *1/4 cup ground flax seeds ( flax sed meal) *1/3 cup melted butter, cooled or coconut oil if you are vegan) *2 tablespoons runny honey *Juice and zest of one large lemon or two small ones *3/4 teaspoon vanilla powder *Coconut (shredded), poppy seeds, cocoa nibs and/or hemp seeds to roll balls in

Mix all ingredients in a food processes until well combined. If it is too soft add more flax meal. Roll into balls. In a separate bowl put a couple tablespoons of topping of choice or a mixture of them. Roll balls in topping. Place balls on a baking tray. Put in fridge for 30 minutes to set.

You can store in the fridge what you don't eat that day.
