Black Bean Brownies


This recipe is adapted from My Petite Kitchen, it's so easy to make, and even easier to eat!

These brownies are high in protein and fibre. They aren't sickly sweet like traditional brownies, but they have great flavour and consistency.

RECIPE:

1 tin (400g) black beans (1 1/2 cups cooked black beans) 1 1/4 cup soaked dates 4 eggs 1 tablespoon apple cider vinegar 1 teaspoon bi- carb/baking soda 1 teaspoon vanilla powder

Preheat oven to 160C/315F. Line a square cake tin with baking/ wax paper.

Place all ingredients in a food processor and blend until smooth and completely combined. Pour into tin and cook for 30 minutes. Let cool before turning out and slicing.

Serve with cream or coconut chai pudding.

These brownies travel well, so save some for lunches.
