My littlest one has been busy this morning making Vegan Choc Chip Cookies.
These are great if you are eating low carb as there are no grains in the mix. You can omit the maple syrup and add more coconut oil to reduce the carbs even more. It's paleo, vegetarian and vegan, too.
*1 1/2 c almond natural meal *1/4 teaspoon baking soda (bi-carb) *1/2 teaspoon vanilla powder *Chocolate, vegan, chopped or cocoa nibs *Pinch of sea salt *2 Tablespoons melted coconut oil *1 1/2 Tablespoons maple syrup or honey *Shredded or chipped unsweetened coconut (optional)
Mix dry ingredients in a bowl, then add wet ingredients and mix together. Roll dough into small balls and place on a prepared (greased or lined), flattening slightly. You can top with coconut if desired.
Bake in low oven, 160C, for 15 minutes. Let cool on a rack.
