PEANUT BUTTER FUDGE
This a Donna Hay recipe from her Fresh & Light series. My daughter, who loves pb, told me this is her "new favourite dessert". Be warned: it's moorish!
It's a wonderful after-school snack or nice with a cuppa. Best part is there's only four ingredients and it took a whole five minutes to prepare!
1 cup smooth peanut butter 2/3 cup coconut oil 1/3 cup honey (optional, or decrease to taste) 2 teaspoons vanilla
Put all ingredients in a small saucepan, put over low heat and stir until melted and mixed well. Pour into a lined tray and place on fridge until set, about four hours.
