Traditional Toasted Muesli

Not everyone in my house is grain-free, so I make a traditional toasted muesli for them:

Mix together rolled oats, puffed rice, almond meal, shredded coconut, nuts and seeds. Then heat coconut oil, sweetener of choice (maple syrup here), vanilla powder and cinnamon until it is liquid and mix into the muesli. Cook for an hour in a low oven spread on baking trays. Let it cool completely before storing in the pantry.

You can play around with the ingredients based on what you have on hand....add raw cacao powder for a chocolate muesli high in zinc and antioxidants, or add dried fruit for iron. Change the spices to suite the season...chai spices are great to warm you in Winter along with orange zest.
