I needed an easy dinner last Friday, and this is what I came up with....mushrooms in a tomato sauce. You will need a knife and fork to eat this.
350g cherry tomatoes, cut in half
3 garlic cloves, thinly sliced
salt & pepper
drizzle of olive oil
drizzle of balsamic vinegar
chopped fresh herbs - rosemary, oregano and lemon thyme (you could use whatever is around)
Mushrooms, whole, how every many will fit in your oven dish without overlapping
sliced cheese of choice
Preheat oven to 200C/380 - 400F. Place all ingredients except the mushrooms and cheese in a casserole dish and mix well. Place mushrooms on top. Put in the oven for 15 minutes. Place cheese on top off the mushrooms and cook an additional 10 minutes.
Serve it a glass of red maybe....
