When I was first diagnosed with type 1 diabetes I discovered a book that changed everything for me, "Dr. Bernstein's Diabetes Solution."
In it Dr. Bernstein talks about how difficult it is to estimate the carbohydrate content of a meal and match that to your insulin dose. Nutrition labels can be off by as much as 20%, your metabolism can vary greatly depending on many factors, such as hormone levels, and insulin absorption can vary depending on dose, injection site, etc.
You need to be a chaos mathematition to take into consideration all of the variables that go into adjusting insulin to cover high carbohydrate meals. The only way to avoid it is to decrease your carbs. This is what Bernstein calls "the law of small numbers".....small amounts of carbs means small amounts of insulin, which in turn decreases your risk of riding the blood sugar rollercoaster.
In order to make this work you need to injest only small amounts of slow-release carbohydrates and avoid fast- acting ones. Since my diagnosis I have lived by this "Law" and am so grateful to Dr. Bernstein for his wisdom! Because of it I almost never have high blood sugar, I have only ever had three hypos and my HbA1c has always been between 5.2 and 5.4.
It isn't easy, and I can't really eat out, but the benefits are worth it....I feel great, have lots of energy and am not suffering any diabetes-related complications. Thank you Dr. Bernstein!
