Cauliflower Pizza


Tonight's dinner....Cauliflower Pizza

To make the base: 4 cups cauliflower 2 eggs, beat Handful of grated chese Pinch of salt 1/2 cup almond meal

Put cauliflower in food processor and pulse until it resembles rice. Place cauliflower and all other ingredients in a bowl and mix well.

Pat cauliflower mix on a prepared and lined pizza tray and bake at 215C for 15-20 minutes. Take out of the oven and add toppings. Bake again for 5-10 minutes. Serves 2 (4 pieces each). You can double the recipe if needed.

This pizza has artichokes, peppers, cheese, pesto and homemade olives.

This dinner had very little carbohydrate, unlike classic pizza.
