This is an quick, nutritious dinner perfect for weeknights when you want something yummy, but don't have a lot of time......
4 organic chicken thighs
1 1/2- 2 cups mushrooms, sliced
2 cloves of garlic, minced
Fresh herbs, chopped (taragon & chives)
Salt & pepper to taste
Add olive oil to a heavy-bottom pan; fry chicken on medium until cooked through and just brown on the outside. Remove from pan to serving platter and cover to keep warm.
Add ghee to pan and mushrooms; cook until almost done then add garlic and finish. Turn off heat, add herbs, salt, pepper and some cream. Mix then pour over chicken.
Serve with steamed veggies (asparagus and broccoli go well) on the side or sauteed greens.
