To make the base:
4 cups cauliflower
2 eggs, beat
Handful of grated chese
Pinch of salt
1/2 cup almond meal
Put cauliflower in food processor and pulse until it resembles rice. Place cauliflower and all other ingredients in a bowl and mix well.
Pat cauliflower mix on a prepared and lined pizza tray and bake at 215C for 15-20 minutes. Take out of the oven and add toppings. Bake again for 5-10 minutes.
Serves 2 (4 pieces each). You can double the recipe if needed.
This pizza has sauteed greens and onions, fresh herbs, zucchini, feta cheese, pesto and homemade olives.
Cauliflower pizza has very little carbohydrate, unlike classic pizza, so this dinner was only 1.5 units of insulin!
