2 bunches of rocket/arugula
1 generous handful of toasted almonds
Lemon zest of one lemon
2-3 pieces of garlic
Lots of olive oil (1/4 - 1/2 cup depending on consistency desired)
Sea salt to taste
(Hard cheese optional or, if vegan, fold in cashew butter after blending)
Place all ingredients in a food processor and blitz. Taste and adjust salt and/or lemon as desired. Adjust consistency by adding additional olive oil.
You can play around with adding different herbs or greens depending on what is available. Use whatever toasted nuts or seeds are in your pantry if you don't have almonds.
Enjoy as a dip, on top of salad, on pizzas or on veggie noodles.
