CHOCOLATE CHIA PUDDING:
1 x 400g tin coconut milk
2 tablespoons (or so) chia seeds
Heaped tablespoon raw cacao
Pinch of vanilla powder
1/2 teaspoon cinnamon
Dash of maple syrup
Mix all ingredients together and set in fridge overnight or for a few hours.
BANANA & PEANUT BUTTER MOUSE:
Handful of frozen bananas
1 tablespoon pea protein
1-2 tablespoons peanut butter
1/2 teaspoon maca powder (optional)
Almond and/ or coconut milk to thin out mixture (about 1/2 cup)
Mix all ingredients with a blender, bar mix or food processor.
Place chia pudding on bottom of glass then banana mixture on top. Top with cinnamon or shredded coconut.
This was my breakfast, but the others had an additional layer on the bottom: oatmeal/porridge - cooked whole oats with vanilla powder and maple syrup.
It was so rich and filling....sometimes you need to be decadent!
