Blueberry and Lemon Muffins

Blueberry & Lemon Muffins for this weeks lunches, adapted from "Good & Simple":

 

6 eggs
80g coconut flour
4T honey
4T butter
2T apple cider vinegar 
1/2 t baking soda
Zest of one lemon
1 1/2 c blueberries

 

Preheat oven to 200C/400F. Mix all ingredients in a food processor. Pour into 10 prepared muffin cups. Bake for 20 minutes. Let cool on a rack.
