The fabulous breakfast fritatta! They are so versatile.
Really I was just cleaning out the fridge....Baked root veggies from Sunday night's roast, sauteed greens from Tuesday, ham, cheddar cheese and eggs. Topped with black seeds. Served with kimchi.
It was amazing, and nutritious, too. I've said it before....eggs are great for diabetics as they stabilise blood sugar. A serve of eggs is how many you can comfortably hold in your hand.
