Homemade Coconut Yogurt

Store-bought coconut yogurt can be expensive; it can also contain ingredients you don't want, like sugar and starch. Using kefir grains will also introduce many strains of probiotics to your coconut yogurt unlike commercial products. Here's how to make coconut yogurt at home with kefir milk grains..... Tip a tin of coconut milk or cream into a glass jar and add some rinsed kefir milk grains (1 - 2 tablespoons). Place cheesecloth over the top and secure with a rubber band. Leave on the bench for up to 24 hours. If you think allowing the coconut milk to ferment for a whole day is too long, meaning it becomes too sour; then just keep tasting it and move on to the next step when it tastes good to you. Remove the cloth; using a clean glass jar, place a strainer over a funnel inside the jar as pictured and slowly pour the cultured coconut milk/cream into the strainer. Stir the coconut milk to get it to flow into the jar, leaving behind the kefir grains. Keep the kefir grains for future use....rinse them with fresh water and place them in milk and refrigerate (they will die if you leave them in coconut milk all the time). As for the yogurt, place a lid on the jar and store in the fridge. Use in the next 5 days. To make sweet yogurt just add honey or maple syrup and a bit of vanilla.

Use this yogurt as you would store-bought coconut or cow's milk yogurt.
