Remember earlier in the week I posted about meal prep? I mentioned making stock and roasting extra veggies to use in soups later in the week; well, here's this week's soup....Curried Pumpkin Soup with Coconut Cream.
Large onion, chopped
Just pan fry your fish in olive oil and butter, remove fish when done and turn heat off. Put more butter, juice of one lemon, chopped chives, pepper and some capers in the pan and mix. Pour over fish and serve. You could add some minced garlic, too, if you like.
